You can make breakfast burritos out of a variety of fillings, including cooked roast beef or chicken or carnitas (pulled pork), rice, shredded cheese, cottage cheese, olives, and salsa. If you have the meat cooked and heated up, you are 3/4 done. Just heat the tortillas gently until they are pliable, put in the fillings (don't overstuff) and you are ready to serve your dad. Zap the finished burrito in the microwave for 30 seconds to make sure it's all nice and hot.
