Easy Mexican food ideas?

If you want to be authentic.......how about tortillas? They are a staple in every mexican household. Very cheap and you could cook up enough for the whole class. Although corn would be the most authentic, flour tortillas are probably easier. All you need is a cast iron skillet. A rolling pin. The recipe is easy to find on the internet. I think it is involved enough to be interesting, but you can do start to finish in one setting. Good luck!
